Zany zucchini Fritters |


Airfry yourself up a snack within half an hour with these easy peasy courgette fritters from Gimme Delicious


Prep time: 15 minutes

Cooking time: 10 minutes

Makes: 10 fritters


Ingredients:

1 courgette

1 egg

1/4 cup breadcrumbs

1/4 cup grated parmesan

1/2tsp mixed herbs

1/4tsp garlic powder



1. Swing batter batter swing


Start leading your very own army of orchestras by chopping your courgette in half and then into batons, about 7cm long and 2cm wide.



Set up your batter station by placing your 1/4 cup breadcrumbs, 1/4 cup grated parmesan,

1/2tsp mixed herbs,1/4tsp garlic powder into one bowl and stir together. Break and beat the egg in another. Choo choo, all aboard non-stop to the batter station.

Get ready to swing your batons batter batter in to each bowl, coating first with the egg then the crumbs.


2. As easy as fry


As you dip each courgette into the egg and then the crumbs, place it in your air fryer basket like a baby in a bassinet on top of some baking paper until you have filled the basket up.




Fry those courgettes in a single layer at 200°C for 10 minutes (you may have to do two batches)


Dink and sink!

Lizzy says: "This recipe was a classic 'lets get our air fryers out and blow the dust off them' one. It was nice to end up with a treat that was crispy and unhealthy feeling, but still good for you! I do love a fried courgette and these were so gooey with a lot of flavour on the outside. I think I would make the courgette chunks bigger next time, because the courgette was a little evaporated inside. Still a solid 9/10. "




Kate says: "I'm still not entirely sold on the idea of an air fryer, but these fritters brought me one step closer to acceptance. These were a delicious snack but would also work great as a side dish, super quick and easy once you've got your panne station ready to go. I really liked the hint of parmesan in the breadcrumb mix. My only gripe is that the courgette was a bit juicy, so next time I might dab the courgette batons with a towel to get some moisture out. 7/10"
