Scallion Noods §



If you're looking for a naughty little noodle dish then these scallion noodles from The Woks of life will be right up your street!


Prep time: 5 minutes

Cooking time: 20 minutes

Makes: 3 portions


Ingredients: 80ml flavourless oil (sunflower, rapeseed etc.) 225g spring onions

45ml dark soy sauce

45ml light soy sauce

17g sugar

450g Chinese white noodles


1. Send noods?

Chop up your 225g of spring onions very finely, while simultaneously heating up 80ml of oil. Ideally, for authenticity you want to use your big Chinese cleaver knife



Once the oil is heated, add your beautifully chopped spring onions and fry very gently and slowly until they start to turn golden brown.



Once the spring onions are golden brown and shrivelled up, put on your 450g noodles to cook according to packet instructions while you remove the spring onions from the frying pan and place them to the side for later - leave as much oil as you can in the pan.



In the now empty frying pan, add 45ml dark soy sauce, 45ml light soy sauce and

17g sugar. Cook, stirring for a couple of minutes until it start to bubble. Make use of your 2001 style monolith to keep an eye on the sauce for you




2. Noodvengers, assemble!

Lastly, drain and portion out your noodles adding a tablespoon of the sauce and sprinkling over some of the spring onions before stirring it all together. You can now add more sauce if you wish!

Kate says: " This was a very quick but exceedingly naughty dinner. I feel like this would be a good one to have in your backpocket as a storecupboard dinner when you really don't feel like going to the shops but have some spring onions lurking in the fridge... I really liked the depth from the soy sauces but the spring onions felt a bit like hairs to me and I think if I fancied a noodles dish I would probably make biang biang noodles instead. Nonethless very nice 7/10 "
