Franken french toast |

Wakey wakey eggs and bakey no more! Now it is wakey wakey frenchy toasty, and this is a particularly special one from Symmetry Breakfast which has a delectable cornflake crust

Prep time: 5 minutes

Cooking time: 15 minutes

Makes: 2 portions

Ingredients: 1 egg 150ml whole milk

1/2tsp of vanilla extract

1tbsp icing sugar

100g cornflakes

50g ground almonds

2 thick slices of brioche

1 1/2tbsp butter

1. Le Pain Grillé

Get your French on á la Tom Cardy and preheat the oven to 180°C.

In one bowl, mix together 150ml milk, 1 egg and 1/2tsp vanilla

Crush 100g cornflakes in a bag so you have a range of sizes (some big flakes, some small'uns), add to another bowl with 50g ground almonds and mix these together

Cut two thick slices of brioche and soak these in milk mixture until they have absorbed it all.

Gently lift your eggy baby into the cornflake/almond mixture and coat both sides with cornalmonds

Melt the butter in a frying pan and add the french toast in his new cornflaké Manteau. Cook for two or three minutes on each side, or until a nice golden brown.

Pop these into a baking tray and bake for 10 minutes until crispy on the outside, soft in the middle

Dust with icing sugar and serve with fruit of choice, edible flowers if you have them (or the foraging skills to find them), some syrup and sour cream.

Kate says: "My normal go-to for breakfast is pancakes, so this French toast was a fun little sojourn into other breakfasts with help from the king "Symmetry Breakfast". I think the cornflakes were a cool twist, but probably not one I would repeat as I quite like my French toast on the squishier side. For what I want from my French toast this was just an extra step which meant longer until I could sit down for my morning coffee. 6/10 I think I would go standard French toast or pancakes next time"
